There are seven different selections of Chardonnay at Heggies with three favoured French Bernard variants comprising the majority of this wine. The younger plantings are trained to a vertically shoot-positioned canopy and the older vines on a two wire vertical framework; this gives a range of flavour opportunities. The vines are shy bearing, giving grapes of intense flavour. Hand picking and gentle whole bunch pressing minimises the extraction of tannins and preserves natural fruit aromas. The Heggies picking and pressing regime gives fine juice with light solids; the whole juice fraction was fermented by the wild vineyard yeasts in new and previously used French oak barrels.
The nose is rich and complex, it is a delightful meld of lime fruit, wild ferment flintiness and fine French oak. The palate is full and rich offering flavours of pear, quince and nashi showing a creamy nougat fullness underpinned by the typical Heggies Vineyard minerality. The finish is long and fine with a fresh zestiness.
